Instroom x Seppe Nobels
Where gastronomy brings people together
About Instroom
What once began as a gastronomic training restaurant with a social heart has grown into a total experience where gastronomy, art, and human connection come together.
At Instroom, everything revolves around culinary exchange, social employment, and the quality of Belgian organic farming and short supply chains. Under the guidance of Green Michelin Star chef Seppe Nobels, the students translate their personal stories into innovative dishes, inspired by European techniques and pure, local ingredients.
Instroom leads a nomadic existence. Their previous stop was the Gasthuis in Mechelen, where the team was awarded a Green Michelin Star. Today, you can find Instroom at the VVW estate on the Scheldt, on the Left Bank in Antwerp.
And this winter…
At the table at PAILLET.

Seppe Nobels - The Chef
Seppe Nobels is one of the most influential chefs of his generation. His vegetable-focused cuisine — awarded a Michelin Green Star and international recognition — is based on sustainability and local products.
For him, cooking is inextricably linked to place and time. What ends up on the table evolves with the environment in which he lives and works.
His projects combine craftsmanship and commitment, with deep respect for the region and tradition.
This winter, he brings that vision to PAILLET.
What comes on the table
For Seppe, cooking is inextricably linked to the place where he lives and works. He prefers products from the region or directly from his own garden.
What appears on your plate during PAILLET remains a surprise until the very last moment.
What is certain: purity, craftsmanship, and a festive menu that evolves with the evening.
